The Bloom, stylized as The B100m, is a new food hall in Downtown Miami, founded by the team behind Mia Market and led by culinary director J.D. Hilburn, formerly of the prestigious Danube by David Bouley. This establishment is designed as a "chef collective," featuring distinct culinary offerings overseen by notable chefs Alejandra Espinoza and Yasu Tanaka.
 
Cotoa by Alejandra Espinoza: Alejandra Espinoza, renowned for her innovative approach to Ecuadorian cuisine, is making her debut in the U.S. with Cotoa at The Bloom. The menu at Cotoa offers modern interpretations of traditional Ecuadorian dishes. For lunch, casual options like "Guaguasas" (Ecuadorian pizza made with cassava sourdough), fruit-infused ceviches, and cheese-filled pan de yuca are available. In the evening, the experience shifts to a gourmet affair with dishes such as wahoo salsero with passion fruit sauce, tortellinis de maqueño filled with chicken stew, and pork belly with cacao. Cotoa also offers a four-course tasting menu priced at $59.
 
Sushi Yasu Tanaka by Yasu Tanaka: Yasu Tanaka, known for his nigiri-focused sushi approach at Mia Market, continues to showcase his expertise at The Bloom with Sushi Yasu Tanaka. The menu features nigiri omakase, a maguro flight, salmon sampler, and a six-piece chef’s selection, emphasizing high-quality sushi and seafood offerings.
 
B100M by J.D. Hilburn: J.D. Hilburn himself heads B100M, which specializes in comfort food favorites such as paninis, salads, and their signature rotisserie chicken. The rotisserie chicken at B100M undergoes a meticulous three-day preparation process involving brining, drying, and cooking, resulting in crispy skin and tender meat.
 
Design and Atmosphere: The Bloom, designed by Miami-based firm Urban Robot Associates, features a warm and inviting ambiance with wood elements and artwork by local artists Papou and Juan Rozas. Mosaic white tile flooring is complemented by teal and peach accents that extend to the walls and a central column, which serves as a centerpiece seating area adorned with Juan Rozas’ 360-degree mural.
 
Overall, The Bloom offers a vibrant culinary experience in Downtown Miami, blending diverse cuisines and creative culinary talents in a stylish and interactive setting.
