Sunny's Steakhouse Set to Reopen in Little Haiti this October
Sunny's Steakhouse, originally a pandemic-born pop-up from Will Thompson and Chef Carey Hynes, is set to make a much-anticipated comeback in October at its new location in Little Haiti, Miami. Originally launched under a giant tree in the Little River neighborhood during Florida's COVID-19 shutdown, Sunny’s quickly garnered attention for its crudo, steaks, and laid-back atmosphere. The success of the pop-up, with packed reservations and a nod from *Bon Appétit* as one of the best new restaurants in America, cemented its place as a beloved dining experience.
Thompson and Hynes, who also co-owned Jaguar Sun in downtown Miami (which permanently closed in August to shift focus to the new Sunny’s), describe the upcoming location as a refined evolution of the original concept. “It’s amazing to see it come to life,” Thompson explains. With a desire to capture the charm that made the original pop-up so special, they’ve carefully designed this new iteration to preserve its essence while adapting it into a year-round restaurant.
Located at 7357 NW Miami Ct., the redesigned Sunny's will now seat 220 guests across a 13,000-square-foot space, complete with indoor dining, an outdoor bar, and a private dining room. Designed by New York-based Amy Butchko of The Springs Collective, the restaurant will feature hand-carved woodwork, antique light fixtures, and a blend of elements meant to capture the timeless charm of Miami.
In the kitchen, Executive Chef Aaron Brooks, known for his expertise at Edge Steak & Bar, will join the team. Brooks’ mastery of charcuterie will be featured alongside a seafood raw bar offering Florida staples like Treasure Coast oysters, stone crabs, royal red shrimp, and grouper. Additionally, the new menu will bring back fan-favorites like the corn agnolotti with blue crab and saffron from Jaguar Sun.
Thompson is confident that the blend of past successes and new innovations will make Sunny’s a staple in Miami's dining scene. “We wanted to make sure that we didn’t lose what made Sunny’s so special,” he shares, “and we believe this new location strikes that perfect balance.”
Sunny’s Steakhouse is expected to open its doors soon, offering a fresh yet familiar experience for those who cherished its original pop-up days.
